We had over a week of hard freezing nighttime weather. Although the lemon tree was covered, the lemons still froze. Thankfully, they didn't go bad, but they did need to be used.
Well, as they say, Many Hands Make Light Work. We all chipped in and zested and juiced 60 lemons. I've made a double batch of lemon curd, and lemon meringue pie is on the schedule for Tuesday. We love growing lemons!
